Green coffee beans are just coffee beans before roasting. Roasting is what darkens the bean and, in the process, breaks down a compound called chlorogenic acid — so green coffee bean extract is generally included specifically to preserve that compound.

Some studies link chlorogenic acid to modest changes in metabolism and blood sugar response. The results are mixed across different trials, and many of the studies showing an effect used amounts well above what typical supplement labels disclose.
